Pues este es especial. Me lo regalaron, y por supuesto estaba mucho más bueno que el que compro normalmente en el súper.

このお豆腐は特別。お土産でもらったものだから、普段スーパーで買っているのより断然うまい!

This one is special. I got it as a present, and of course it was way better than the one I usually but at the grocery store.

Gōyā chanpurū ゴーヤーチャンプルー

Hace unos meses os expliqué cómo se hace el gōyā chanpurū, un revuelto típico de Okinawa.

数ヶ月前、沖縄の名物であるゴーヤーチャンプルーの作り方を軽く説明した。

Some months ago I explained you how to make gōyā chanpurū, a typical Okinawan dish.

Esta vez lo hicimos con carne de cerdo y unas salchichas que nos sobraron de otra cosa, además del obligado (y amargo) gōyā, el tofu, el huevo y todo lo básico.

今回の材料は豚肉と、なぜかあったウィンナーと、ゴーヤー、豆腐、玉子など通常のチャンプルー材料だった。

This time we used pork, some leftover wieners, and the usual (and bitter) goya, egg, tofu, etc.

ちなみに、豆腐の切り方にビビった外国人外多い。手のひらで切るなんて、危ないことに見えるらしい。

Cómo cortar tofu 豆腐を切る

En Japón el tofu no se corta encima de una tabla, sino en la palma de la mano. Algunas personas tienen la impresión de que es peligroso, pero como solamente hay que dejar el cuchillo bajar lentamente a través del tofu (nada de moverlo hacia los lados) y este se corta más fácil que la mantequilla, no es más peligroso que usar un cuchillo sobre una tabla.

日本で豆腐を切るときにはまな板じゃなくて手のひらで切ることにスペイン人が驚いていた。「危ない!」というコメントが多かったので、ゆっくり見てもらって説明しようと思った。

In Japan they cut tofu on the palm of their hands rather than on a chopping board. Some foreign people feel it’s dangerous but you just let the knife go down through the tofu, which cuts easier than butter. It’s no more danger than cutting on a chopping table.

No soy el mejor del mundo cortando tofu, pero espero que os hayáis hecho una idea de cómo se hace. Es más fácil cortar limpiamente hasta abajo de esta manera que encima de la tabla, y además cuando terminas ya tienes el tofu en la mano – intenta coger tofu crudo de una tabla y verás que es difícil sin que se rompa. Aunque es súper fácil cortar así, si lo intentas por primera vez hazlo lentamente y con mucho cuidado.

僕の切り方は完璧じゃないとは分かってるけど、だいたい通じればそれでいいと思った。まな板で切るときより一番したまで切りやすいし、切り終わると既に手に取ってるからすぐお鍋とかに入れられる。まな板で切ってから取ろうとしたら破れる場合がある。手のひらで切るのは簡単だけど、初めての人にはこう言っておこう:気をつけてゆっくり切って下さい。

I’m not the world champion of tofu cutting but I hope you can imagine how it is to cut it on the palm of your hand. It’s easier to cleanly cut all the way down, and when you’re done you already have the pieces in your hand. Try to get raw tofu from a chopping board and you’ll see there’s a probability that it’ll break. It’s very easy to cut tofu on your hand, but when you try it for the first time please be very careful and do it slowly.

Y así de bueno se queda con un poco de salsa de soja y katsuobushi.

Salteado de verduras y más — 野菜炒めなど

Siguiendo con las cenas normales, el otro día hicimos takikomi gohan, que es arroz que se hace directamente mezclado con cosas (venía todo preparado para mezclar).

Pero el protagonista de la noche fue un salteado de verduras mezcladas con salchichas de frankfurt de esas que llaman aquí vienesas. Y para acompañar nos tomamos un pedazo de tofu crudo con salsa de soja y katsuobushi, que es bonito seco rallado.

普通の晩ご飯、続き。今回は炊き込みご飯と野菜炒め(ウインナー入り)と豆腐だった。普通に、美味かった!特に野菜炒め。

And here we are again with our normal suppers. This time we had takikomi gohan, meaning rice cooked in a way that it comes out mixed with meat, etc. (We bought the stuff to mix at the supermarket.)

But the main dish was some veggies and wieners all cooked together on a frying pan. And we had some tofu with soy sauce and katsuobushi too. Katsuobushi is shavings from dried, smoked tuna.
