Dangojiru 団子汁

Hoy seguimos con el tema de Yufuin. En la foto de arriba veis a Ai comiendo fideos. Pero lo que tiene en los palillos no es un manojo de fideos sino un solo fideo llamado dango. Son así de gordos los fideos del dangojiru.

湯布院の話を続けます。この上の写真では、愛ちゃんが麺を食べている。しかしうどんの束に見えるものは「団子」という麺の1本です!肉団子とは、違います。

Today I’m talking about Yufuin again. Above you can see Ai having noodles. It may look like a handful of noodles but it is actually one single noodle they call dango.

El dango-jiru es como el tonjiru pero con fideos enormes. El tonjiru, a su vez, es algo parecido a la sopa de miso pero con cerdo.

団子汁は豚汁に太い麺を入れたようなもの。

Dangojiru is a lot like tonjiru with large noodles. Tonjiru is something like pork miso soup.

Yo para variar pedí udon con verduras y pollo. ¡Todos los ingredientes eran muy frescos y estaba todo riquísimo!

僕はかわりに山菜と地鶏のうどんを頼んだ。材料が新鮮で全部おいしかった!

For a change I ordered udon with vegetables and chicken. All ingredients were super fresh and everything was delicious!

Soba de nochevieja hecho a mano 手打ち年越しそば

Hace un par de años tuvimos la oportunidad de comer soba hecho a mano por mi suegro. Y en Japón, para recibir el año nuevo, en vez de uvas se toma soba.

2年ぐらい前、愛ちゃんのお父さんの手打ちそばを食べる機会があった。

About two years ago, I had the chance to have hand-made soba from Ai’s father. And maybe you already knew that Japan celebrates the new year eating soba.

Así que ¿qué mejor que soba hecho a mano para recibir el año 2011 en casa de mis suegros? En el vídeo de aquí abajo podéis ver cómo hicimos los fideos desde el principio.

年末年始はそっちに帰ってたし、年越しそばはお父さんの手打ちに決まり!この下の動画では最初から作ってるところが見えます。僕も少し手伝ってみました。

So we welcomed 2011 with hand-made soba, of course. In the video below you can see how it was done from the beginning.

¿Os gustaría hacer soba a mano alguna vez? En mi primera visita a Japón me llevaron a hacer soba con un montón de familias y me gustó mucho. ¡Aunque esta vez he aprendido mucho más!

そばを作った(打った?)ことありますか?初めて日本に来たときは手打ちに連れて行かれて、子供もいっぱいいたので楽しかった。でも今回の方が勉強になりました!

Would you like to make soba by hand some time? They took me to do this once the first time I was in Japan, and I had a very good time with a lot of families and kids, but last time was most instructive!

Somen, fideos de verano 夏の麺:そうめん

El somen es un fideo japonés que se sirve frío, en agua con hielo, y se moja en una salsa.

そうめんは日本の冷製麺の一つで、水と氷に入れて出します。つゆに漬けて食べます。

Somen are Japanese cold noodles which are served cold, in water and ice, and you dip them in a sauce.

Este somen es de Magarita Shokudō, un restaurante de Itoshima del que ya os hablé en primavera presentando un menú más calentito.

これは、春に暖かいメニューを紹介した糸島のお店曲り田食堂のそうめんです。

These somen are from Magarita Shokudō, a restaurant at Itoshima of which I already wrote back in spring, featuring a warmer menu.

Y estos son los somen que me regaló un amigo para hacer en casa.

そしてこれはお友達にいただいたそうめん。

And these are some somen a friend gave me for cooking at home.

Se hierven, e inmediatamente se enfrían con agua y hielo.

茹でてからすぐ水や氷で冷やす。

You boil them and then immediately put them in water and ice.

Luego hay que mojarlos en el tsuyu, una salsa que se usa para mojar varias cosas diferentes en la gastronomía japonesa. Este tsuyu nos lo regaló otro amigo. Y ojo que le ponemos hielo también.

それから、つゆに漬けて食べます。このつゆも、別のお友達にいただいた物です。ちなみに、つゆにも氷を入れてもいい。

Then you dip them in tsuyu. This tsuyu by the way was a present by another friend. We also put ice in the tsuyu.

Con verdura, tortilla, etc. hacen una cena veraniega muy fresquita. ¡Estaba muy bueno todo, gracias! Además, los dos regalos combinaban muy bien.

野菜、卵などで美味しい夏の晩ご飯になる。ごちそうさまでした!美味しかったです。二つのプレゼントはいい組み合わせになった。

With vegetables, omelet. etc. it makes a great dinner for a hot day. It was great! Thank you! And both presents made a great combination.

Taihō Ramen 大砲ラーメン

El otro día cenamos en uno de tantos buenos restaurantes de ramen que hay en Tenjin: Taihō Ramen.

この間天神にある美味しいラーメンのお店の一つで夜食べた:久留米 大砲ラーメン

The other day we had supper at one of the many good ramen restaurants in Tenjin: Taihou Ramen.

Lo primero que hay que hacer nada más entrar es comprar los tickets de lo que quieras comer, que se venden en una máquina expendedora en la que los botones tienen fotos. Yo me pedí el ramen con alga nori y puerro (o cebolleta), y un suplemento de arroz y gyōza. Total: 830 yenes.

入ったら自動販売機ですぐ食券を買うことだ。僕はのりネギラーメンにして、プラス200円でご飯と餃子を付けてもらった。合計830円。

First thing you do once you’re in is getting your food tickets from the vending machine. I got ramen with nori seaweed and Welsh onion, with a rice and gyoza supplement – everything for 830 yen.

El ramen de Taihō Ramen es del estilo Kurume, que muchos citan como el origen del famoso ramen tonkotsu (caldo de cerdo), que engloba a la gran mayoría del ramen que se come en la isla de Kyushu.

大砲ラーメンは元祖豚骨とよく言われる久留米ラーメンだ。豚骨ラーメンにはいろんな種類があって九州では他のラーメンを食べるのは珍しい。

Taihou Ramen‘s ramen is Kurume style, which is often cited as the roots of all tonkotsu ramen. Tonkotsu or pork soup ramen is a superset of almost every ramen variety in the Kyushu Island.

Después de ponerle sésamo y otros condimentos y comer un poco, tiene esta pinta.

ごま等を付けて、半分食べてから、見た目はこの感じになってくる。

After putting sesame and stuff in the ramen, and having half of it, it looks like this.

Estos son los gyōza, una especie de empanadillas chinas que se suelen hervir o hacer al vapor, pero que en Japón y sobre todo en esta zona es muy típico comerlas a la plancha.

これは焼き餃子。焼くのは日本だけかな?とにかく美味しい。福岡では焼き餃子がかなり有名。

These are gyoza, Chinese dumplings that are usually steamed or boiled, but we like to fry them on a pan here in Japan.

Todo esto es para ponértelo a tu gusto en el ramen y para mojar los gyōza. Un día os haré un cursillo.

初めて来る場合は、付けれる物が多くて難しいかもしれない。幸いなれて来た。

All this stuff is to add a personal flavor to your ramen and gyoza. Maybe I should explain how to use everything some day.

Y este es el restaurante visto desde fuera. Ojo que el «taihō» de Taihō Ramen significa «cañón».

Here’s a map so you don’t get lost. As you see, it’s just 2 minutes from the place we walked around yesterday.

Soba y soba-yu 手打ちそばとそば湯

El padre de Ai va una vez al mes a hacer soba a mano en un centro de actividades culturales que hay al lado de este estanque.

愛のお父さんは月1回この池の向こうの公民館にそばを打ちに行く。

Ai’s father goes once a month to the community center next to this pond to make soba.

Soba y soba-yu 手打ちそばとそば湯

El soba es un tipo de pasta que se hierve y se puede tomar frío o caliente. Además en este caso hicieron la masa a mano y cortaron los fideos ellos mismos.

夏だから冷たい手打ちそばにした。

Soba are noodles that you boil and can have them hot or cold. This time the noodles were hand made.

Soba y soba-yu 手打ちそばとそば湯

Ayer además del soba hicieron tempura de verdura traída directamente de huertos del mismo pueblo.

そば以外にも町の人の畠で出来た野菜を天ぷらにしてくれた。

Besides the soba, they fried some tempura made with vegetables taken from fields in the same town.

Aquí está ya todo en los platos, y algo de fruta también.

ここはもう全部お皿に盛ってあって、果物も切ってある。

Here, everything is already on the dishes, and there is some fruit too.

Este es un vídeo de nosotros comiendo el soba frío y bebiendo soba-yu, una sopa que se hace mezclando las sobras del caldo de mojar el soba con el agua donde se había hervido. Está buena, y parece que es muy nutritiva.

これはそばを食べているところと、そば湯を飲んでいるところの動画です。そば湯は、そばをゆでたお湯を残ったそばつゆに混ぜて出来上がる。味も美味しくて、栄養たっぷりらしい。

This is a movie of us having soba and soba-yu. Soba-yu is a soup you make mixing the water where you boiled the soba with the (different) soup you were dipping your soba into.

Agradezco mucho a mi suegro y a sus compañeros que nos dieran la oportunidad de probar toda esta comida hecha con ingredientes hechos a mano. Se nota mucho la diferencia.

こういう手作りの材料で出来たお料理をいただく機会があまりないので、お父さんたちに感謝しています。普通のお店とはやっぱり、味が違う。

We don’t have that many chances to have a meal made 100% with hand made ingredients, and we appreciate a lot Ai’s father and his friends sharing their soba with us. It really tastes different.
